As the Program Director for the Ardmore Institute of Health foundation, Amy loves being able to share the power of fiber foods and how eating a plant predominant diet can transform our health. 

She helped develop Full Plate Living’s lifestyle medicine nutrition approach, which shows you how to eat full plates of healthy, delicious food without feeling famished, frustrated or deprived. The best part of her job, she says, is celebrating when a member reaches a health goal, like seeing a number on the scale they haven’t seen in decades or wowing their doctor with an improved A1C or lower cholesterol.
